Put sweet butter and granulated sugar in a mixing bowl and stir them will into a cream
Using a grater, grate a lemon rind
Add eggs, the grated lemon rind and brandy to the cream and stir properly till the mixture is creamy
Sift flour into a big bowl. Add salt and baking-powder to the bowl. Add the mixture a little at a time in the bowl with the other ingredients while stirring, until the mixture becomes a little doughy.
Tip:Sift more flour if necessary to make the dough stiff enough to roll out
Dust the pastry board with flour, and put a portion of the dough on the board. Toss the dough lightly from side to side till it's covered with flour
Dust the rolling pin with flour and roll the dough until it's thin
Using a cookie cutter, cut the dough in shapes.
Rub a baking pan with flour properly. Then, using a pancake turner, put each cookie in the baking pan
Bake the cookies in a moderate oven (around 350°F or 180°C) till they're light brown
Before taking the baking pan out of the oven, sprinkle the cookies with granulated sugar or sprinkles on top
After the cookies are cooler, move them from the pan to a big platter using the pancake turner & Enjoy!
When the cookies are cold, put them in a stone crock to keep them crisp and yummy.
