Well, it’s because they’re so easy to make, and because they’re pretty damn tasty.

We all know about the traditional potato Latkes

But this time we decided to give you something a little cheesier – a high protein cottage cheese pancakes recipe.

These cottage cheese Latkes are a great little snack for Hanukkah, Passover, or any light dinner – and they’re extremely easy to make.

Ingredients
  • hand mixer
  • peanut oil olive oil works just as well
  • 3 eggs
  • 1/2 cup milk
  • 3 cups Cottage cheese
  • 1 cup matzo meal flour can be used instead
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 3 tbsp sugar
  • sour cream (Optional). applesauce or maple syrup works just as well

Instructions
  1. Peal the eggs, and pour them into a bowl with the milk and cottage cheese
  2. Add the salt, cinnamon and sugar to the bowl.
  3. Using a hand mixer – stir well.
  4. Gradually add matzo meal while mixing to form the batter into Latkes (a little doughy)
  5. Heat approximately 1/2 inch of oil in a large heavy-bottom skillet over medium-high heat (around 400°F or 200°C.)
  6. Place large spoonfuls of the batter, and fry them in the oil for 3-4 minutes a side. Tip: Flip the latkes when the bottom is golden-brown.
  7. Serve hot with sour cream, applesauce or a little sugar on top & Enjoy!
Recipe Notes

You can choose to add 2 potatoes to make the batter more firm.
